As said in the move, the liquid becomes stronger with everything it comes in touch with. Due to Broly's immense power, the liquid became too powerful, and kinda took over Broly. That's why Broly was able to still maintain a physical form when he was swallowed by more liquid (too much, so even Broly who was made up by it was swallowed by it), as he basically was the liquid itself.

Probably due to the information his DNA gave. They saw information of Broly as a baby, so it wouldn't surprise me if they saw that Broly was a Saiyan, and learned something about the Saiyan race through Broly's blood.

Broly didn't care about almost being killed. He DID care about Goku crying though, as it kept him awake and almost made him cry. Combine that with his urge to destroy the complete galaxy, and you get Broly who wants to kill Goku to take revenge for that.
